- Maida - 300gm
- Sugar - ½ kg
- Cardamom powder - ½tsp
- Vanaspathi - 100gm
- Bakking soda - a pinch
- Curd - 1 Tbsp
- Oil - deep fry
- First we will make sugar syrup by adding sugar and water in 2:1 ratio and also add cardamom powder, it should be sticky.
- Now in a big bowl add maida, vanaspahti, bakking soda and curd, mix all together with hand.
- Now add water as little as possible and make a dough.
- In a wok add oil to heat. Take a small portion of dough and make a ball and give a dispersion in the center.
- Now deep fry it batch by batch till light brown and soak in the sugar syrup for 45- 1 hr and take it out.
Note:
- To conform that your dough is ready, take a portion and role it, it should role with out crack.
- Don't keep the dough for long time, other wise it will ferment.
- Don't make the ball and keep, do it at the time of frying.
- You can also decorate it with colored desicated coconut by mixing the coconut with different food colors.
- Rice - 1cup
- Water - 3 cup
- Milk - 2 cup
- Curd - 1/2 cup
- Green chilly - 2 (Chopped)
- Ginger - 1 small piece (Chopped nicely)
- Dry chilly - 2
- Oil - 1 tsp
- Butter - 2 tsp
- Mustard seed - 1/2 tsp
- Salt - To taste
- Coriander leaves - As required
- Curry leaves - As required
- In the cooker put water, rice and salt. Let 3 whistle come and simmer the flame for another 5 min.
- In the above cooked rice add milk, butter, curd, green chilly and ginger.
- Heat the oil in the wok and add mustard seeds, let it spluter then add dry chilly,curry leaves and coriander leaves.
- Now add this above mixture to the rice mixture.
- It is ready to serve now.
NOTE: If you want to make it rich you can add cashewnuts, rasins in 3rd step.
- Semolina - 1 cup
- Curd - ½ cup
- Onion - 2 (finely chopped)
- Tomato - 1small (finely chopped)
- Green chilly - 2-3
- Cabbage - ½ cup (finely chopped)
- Baking powder - ½ tsp
- Red chilly powder - ½tsp
- Cumin seed - 1 tsp
- Oil - as required
- Salt - to taste
- Coriander leaves - As required
- In a large bowl mix curd with ½cup of water and then add semolina. The consistency should not be watery.
- To the above add salt and baking powder, leave it for 15-20 min.
- Meanwhile in a small woke put ½ tsp of oil and the cumin seeds, when it start to splutter keep a side to cool.
- After 20 min, there will be no water and it will become soft. Now add onion, tomato, cabbage, green chilly, coriander leaves, fried cumin seed and chilly powder, now mix the batter once more.
- Heat the non-stick tava on the stove and add a ladle full of batter on the pan and give a nice round shape. Cover the pan and let it become golden brown from the bottom.
- Now turn the it so that it will become golden brown on both side.
- Now it is ready to serve hot with chutney.
Kadi
- Chick pea flour - ½ cup
- Curd - 2 cups
- Red chili powder - 1 tsp
- Turmeric powder - ½ tsp
- Salt - to taste
- Water - as required
- Oil - 2 tsp
- Onion - ½ cup (length wise)
- Ginger- ½tsp (chopped)
- Tomato - ½ cup (chopped)
- Green chilly - 2 No. (chopped)
- Cumin seeds - ½ tsp
- Fungreek - ½ tsp
Pakora
- Chick pea flour - 1 cup
- Potato - ½ cup (chopped)
- Onion - ½ cup (chopped)
- Red chilly powder - ½ tsp
- Garam masala - ½ tsp
- Salt - to taste
- Coriander powder - ½ tsp
- Water - ¾ cup
- Ginger- ½tsp (chopped)
- Oil - to deep fry
- For pakora: In a vessel put all the ingredients except oil mix well and make as pakora and deep fry it. And keep it a side.
- To make kadi: In a kadai put oil, when it hot add cumin seed and fungreek seeds, let it crackle.
- Now add ginger pieces, onion and green chilly let it soute' till raw smell goes.
- Add the tomatoes and little salt so that it mashes quickly.
- In another vessel put the curd, gram flour, red chilly powder, turmeric powder, salt and water as required, weep it nicely.
- Now in the tomato mixture add this curd mixture and mix well.
- Let it boil till it thickens.
- Now add the pakora in this kadi and garnish it and serve it with hot rice.
- Sprouted green gram – ½ cup
- Onion – 1tsp (finely chopped)
- Coriander leaves – ¼ bunch
- Dry red chilies – 4 (Chopped)
- Curds – ½ cup
- Mustard – ½ tsp
- Oil – ½ tsp
- In a big bowl mix green gram, coriander leaves, onion and curds.
- In a pan heat oil. Add mustard and chilies.
- Add this to the curd mixer and mix with salt and serve it chilled.
- Cucumber – 1 cup (grated)
- Curds – 2 cups(fresh)
- Cumin powder – 1 tsp
- Red chili powder – ¾ tsp
- Salt - to taste
- Coriander– 1 tbsp (chopped finely)
- Cumin – ½ tsp
- Beat curd till smooth
- Add all ingredients
- Mix well and chill for an hour before serving.
It is a Indian dish which every one loves to eat. In Tamilnadu we call this dish as Thayir vada, in Andhra they call us Perugu gari, in Karnataka as Masaru vada etc..what ever they call but the dish give same taste every where.
- Urad dal - 1cup
- Curd - 2cups
- Salt - to taste
- Mustard - 2tsp
- Cumin seed - 2tsp
- Oil - to deep fry
- Sugar - as required
- Onion - 1 (finely chopped)
- Ginger - small piece (finely chopped)
- Green chily - as required (finely chopped)
- Curry leaves - as required
- Soak the urad dal for atleast 2 hours.
- Now grind the dal with little less water. Add salt, onion, ginger pieces and green chilly, mix it well.
- Now heat the oil and dip your hand in a clean water and now take a little batter in your hand and make small hole in the center and drop it in the oil.
- Fry it till it become golden brown. Arrange it the plate in which you are going to serve.
- Wipe the curd nicely and in that add salt and sugar as for your taste.
- Now in a wok put 1tsp oil, when it is hot add mustard, when it starts to crackle add cumin seeds and curry leaves.
- Add this to the curd and mix well. Pour this over the vada and keep it in the fridge and serve it cool.
It is very easy raitha and can be made it quickly.
- Curd - 3cup
- Cucumber - 1 no(chopped)
- Onion - 1no(chopped)
- Tomato - 1no(chopped)
- Salt - to taste
- Coriander leaves - as required (chopped)
- Green chilly - 1 chopped
- Wipe the curd.
- In a bowl put coriander leaves, green chilly, cucumber, onion, tomato and salt.
- Mix all to gather and put the curd.
- Now serve it with biryani.
